To understand the "Mediterranean Diet," we must immerse ourselves in all that is Mediterranean. This means putting aside our books and research and stepping out of our current culture for a short while. This so we can envelope ourselves in the culture, lifestyle and food choices of a country whose shores are washed by the Mediterranean.
Field to Plate’s 2008 Exchange Forum takes place on the Isle of Crete. For 6 days, our group of 12 will have the rare opportunity to spend quality time in rural communities, meeting with residents and following traditional agricultural and culinary practices along with them. Together with experts from Crete, we will explore the countryside blanketed with wild herbs, the olive groves, vineyards, fishing ports and vegetable gardens. We will see the diversity of Crete’s bounties brought together in the kitchen.
In this setting, and in complete contrast from the hectic world and its modern accoutrements, we will meet and truly live among a people who embody the renowned Mediterranean lifestyle. We will discover how and why their way of life is so beneficial to the rest of the world.
