Re-Imaging the Menu:  Incorporating Food As Medicine On the Menu

The rapidly growing area of functional medicine embraces food and deep nutrition as the foundation of healing. The movement is aptly named “Food As Medicine.” Experts in this arena are challenging traditional ideas around more restrictive nutrition and dietary approaches, replacing them with whole food solutions, customized to the client.  In this presentation, we’ll take a close look at the “Food As Medicine” movement and examine how its tenets can be introduced and integrated into the institutional menu. Using examples and live input from the audience, Amanda will guide attendees through a recipe and menu “retooling” exercise. This visual and menu mapping experience will compare and contrast conventional dietary approaches with current Food As Medicine thinking.
